Peanut Salad
Salads aren’t served in large portions in Indian cuisine, but a standard salad found in many regional cuisines of India is the kachumbar, and typically consists of chopped cucumber, onion and tomatoes.
Usually the seasoning is just lime juice, salt and pepper.
This peanut salad recipe is my take on the kachumbar. I’ve used a cilantro cashew dressing instead. And the best part is the addition of roasted peanuts!
