Vegan Fritters

This was one of my favorite after school snack growing up in India. Most homes had leftover rice and yoghurt in their fridge. I have finally been able to make an oil-free, yoghurt free version with the help of an air-fryer. Using a tabletop convection/air fryer would save a lot of time, as opposed to a basket air-fryer like the one I have, where you need to cook in batches, this recipe is totally worth the time.

Air Fryer Brown Rice Fritters

Serves Makes 50 fritters

Using a tabletop convection/air fryer would save a lot of time, as opposed to a basket air-fryer like the one I have, where you need to cook in batches, this recipe is totally worth the time.

Ingredients

  • 4 cups cooked brown rice
  • 1 cup onion (cut into 1/4 inch dice)
  • 1/2 cup plant-based milk (unsweetened unflavored)
  • 1/2 cup chickpea flour
  • 1/4 cup almond flour
  • 2 tablespoons lemon juice
  • 1 teaspoon baking soda
  • 1 teaspoon turmeric pwoder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon sea salt (optional)

Directions

1. Preheat the air-fryer at 370 for 10 minutes. If you are using basket type air fryer, cut 12 small pieces of parchment paper, about 2 inches x 4 inches. If you have a tabletop convection oven/air fryer, prepare a baking sheet lined with parchment paper.
2. Combine all the ingredients in a mixing bowl. Mix well to create a dryish batter.
3. Scoop 1 1/2 tablespoons of the batter onto the pieces of parchment paper or prepared baking sheet. Place in the air fryer and fry at 370 for 15 minutes, until the fritters are crispy and lightly browning on the top.
