Air Fryer Banana Fritters (Pakoras)

This recipe makes use of those overripe bananas which usually get thrown out. My mother combines the sweetness from the bananas with the pungent fragrance of fresh fenugreek greens to give a very unique flavor. Since fresh fenugreek greens are not that easily available locally in Los Angeles, I use dried greens and fresh spinach and they turn out just like my mom’s pakoras.

Air Fryer Banana Fritters

Ingredients

  • 2 ripe bananas, peeled
  • 1/2 cup chickpea flour
  • 1/2 cup rolled oats
  • 1 cup fresh spinach (chopped)
  • 1/2 cup plant-based milk (unsweetened, unflavored)
  • 2 teaspoons dried fenugreek leaves (or 1/2 teaspoon ground fenugreek seeds)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon ground black pepper

Directions

1. Preheat the air-fryer at 350 for 10 minutes. Have 12 silicone cupcake liners ready.
2. Combine all the ingredients in a mixing bowl. Mix well to create a thick batter.
3. Scoop 1 1/2 tablespoons of the batter onto each cupcake liners. Place in the air fryer and fry at 350 for 10 minutes, until the fritters are crispy and lightly browning on the top.
4. Remove from the air fryer, let it cool for a minute. Serve warm with cilantro chutney.
