Rinse the quinoa in water a couple of times. |

In a pan heat 1 cup of water and add the quinoa. Cook on high till the water comes to a boil. Lower the heat to a simmer and cook for another 10 mins. |

In another pan, roast the cumin seeds on medium heat, till they turn brown, being careful not to burn them. |

Add the spring onions, tomatoes and cook for a minute. |

Add cilantro, salt and pepper and cook for another minute. |

Stir in the cooked quinoa and lemon juice and cook for another minute. |
7.

Serve hot or cold as desired with sautéed vegetables and beans. |
