Quick and easy to make vegetable and bean stew.
Ingredients
- 1 cup kidney beans (dry)
- 1 cup leek (finely chopped)
- 1 teaspoon garlic (grated)
- 1 cup red bell pepper (diced)
- 1 1/2 cup broccoli (small florets)
- 2 cups tomaotes (diced)
- 1 tablespoon fresh dill (finely chopped)
- salt (as per taste)
Directions
1. | Soak the beans for 6-12 hours in filtered water. Rinse thoroughly. |
2. | In a pot, add the beans and 2 cups of water. Cook on medium heat for 15-20 mins till the beans are halfway cooked. If you see a build-up of froth, scoop it out and discard. |
3. | Add the leeks, garlic and tomatoes. Cook for another 10 mins. |
4. | Add the bell peppers and broccoli, salt and fresh dill. Add more water if needed. Cook for another 5-10 mins till the broccoli is cooked. |
5. | Serve hot on a bed of rice medley. |
Note
This recipe shows you how to soak and cook dry beans. You can also use canned beans. Rinse the beans thoroughly and add 1 cup of water. Follow the recipe from where you add the leek and garlic.
