Potato Chickpea Stew
I like to add leftover chutneys and sauces into stews as they have the concentrated flavors just like spice blends. This recipe uses celery chutney.

Ingredients
- 1 1/2 cup potaotes (diced)
- 1 cup chickpeas (cooked)
- 1 Medium tomato (chopped)
- 1 stalk green onions (finely chopped)
- 1 ” ginger (grated)
- 1 tablespoon celery chutney
- 1 tablespoon fresh cilantro (finely chopped)
- salt (as per taste)
Directions
1. | In a pot, cook the green onions, ginger and celery chutney for 1 minute. |
2. | Add the potatoes and tomatoes. Cook for 10-15 mins till the potatoes are cooked. |
3. | Add the cooked chickpeas, salt and cook for 2-3 mins. |
4. | Garnish with cilantro and serve hot with brown rice. |
