Chickpea Salad
Chickpeas are one of my favorite additions to lunchtime salads, but you can substitute with any other beans, like great Northern, Black-eyed peas.
Chickpea Salad

Ingredients
- 1/2 cup chickpea (cooked)
- 1 cup zucchini (chopped)
- 1 cup celery (chopped)
- 1 cup carrot, shavings (loosely packed)
- 1/2 stalk spring onions (finely chopped)
- 1/2 tablespoon lemon juice
- salt (as per taste)
- 1 tablespoon cilantro (finely chopped)
- 15-16 Leaves butter lettuce
Directions
1. | In a bowl bring all the ingredients together except for the lettuce. |
2. | Toss the mixture well and let sit for about 15 mins. |
3. | Serve on a bedding of butter lettuce. |
