Baked Delicata Squash
This baked Delicata Squash is a favorite dish of mine.
I like to bake vegetables whenever possible as they get a nice roasted flavor. Plus you don’t have to stand in front of the stove and watch them cook!

Ingredients
- 2 cups delicata squash (cubed)
- 1/4 Medium onion (sliced)
- 1/4 clove garlic (grated)
- 1 pinch black pepper, (ground)
- 1 pinch salt
- 1/2 teaspoon cilantro (finely chopped)
- 2 tablespoons roasted peanuts (crushed)
- 1/4 lemon (juiced)
Directions
1. | Preheat the oven to 375 degrees. In a mixing bowl, mix the squash, onions, salt pepper, lemon juice and garlic. |
2. | Pour 2 tablespoons water on a baking dish and spread the mix. Bake covered for 20 minutes. |
3. | Remove from oven and toss the squash. Bake uncovered for another 20 minutes. |
4. | Garnish with cilantro and crushed peanuts and serve hot. |
