Can’t Beet the Apples and Kale Salad
I like to make this simple salad in the fall, when the golden beets are in peak season.
The sweetness from the beets and apples balance the bitterness of the kale.
Can’t Beet the Apples and Kale Salad
Ingredients
- 4 cups kale (cut into 1 inch squares)
- 1 Large apple (any sweet variety, sliced)
- 1 Large golden beet
- 1/2 tablespoon sesame seeds
- 2 tablespoons lime juice
- salt and pepper, as per taste
Directions
1.
In a bowl, toss the kale with the lime juice. Mix well and refrigerate for at least an hour

Cut the beet in half and place in a steamer. Steam for 15-20 minutes till its cooked all through. Let it cool.

Slice the beets into the same size as the apples
4.
Dry roast the sesame seeds in a skillet on a medium low heat, till it starts to give out aroma. Be careful not to over roast it.
5.
When ready to serve, mix the apples, beets, sesame seeds and salt and pepper into the bowl with the kale. Serve right away.
