Kale Pasta
I like my pasta to have lots of vegetables, so I like to make this dish when I have a lot of leftover fresh vegetables in the fridge that need to be eaten.

Ingredients
- 1 1/2 cup fusili pasta
- 1 cup green onions, green leaves only (finely chopped)
- 1 cup tomatoes (finely chopped)
- 2 cups kale (finely chopped)
- 2 cups broccoli (small florets and chopped stems)
- 1/2 clove garlic (crushed)
- 1/2 teaspoon dried oregano
- salt (as per taste)
Directions
1. | Bring a pot of water to a boil. Add the pasta and cook for 10-12 minutes. Drain and keep aside. |
2. | In a pan cook the onions and tomatoes in 1/2 cup of water. Add oregano and cook for 10-12 minutes. Add water as needed. |
3. | Blend the sauce using a hand blender. |
4. | In another pan, sauté the kale and garlic in 2 tablespoon of water. Cook till the kale has wilted lightly, about 4-5 minutes. |
5. | Add the kale to the pasta. |
6. | In the same pan used for the kale, sautee the broccoli in 2 tablespoon of water for 4-5 minutes. |
7. | Add the broccoli and salt to the pasta. Pour the sauce and mix the paste, vegetable, and sauce together. |
8. | Serve hot. |
