Whole-Food, Plant-Based on $5 a Day—Day 5

Today is day 5 of my 10-day “$5 Budget Vegan” challenge. I wanted to see if it was possible to live on a healthy whole-food, plan based diet for $5 or less a day.

And so far, with a bit of planning I’ve learned that it is possible. (Read more about the challenge here)

Every day has brought new insights on what it’s like, living on a low budget.

Today is the first day I haven’t needed to do any shopping. I have plenty of ingredients on hand to play with, because I was able to do a bigger shop yesterday.

I also have plenty to eat!

Which meant, today I was able to cook, not just for myself, but for my boyfriend too.

I don’t know about you, but one of the pleasures  of cooking is sharing food with others, whether its your loved ones or friends or community.

And even on a budget of $5 a day, it was great to be able to do this.

My menu for the day was:

Corn Grits with cashews, apple and raisins.
