Whole-Food, Plant-Based on $5 a Day—Day 3

Today I got a glimpse of a subtle but persistent psychological effect of surviving on a tight budget.

I noticed I constantly worried about whether I’d have enough food. Even though I knew I had plenty for the day, I still felt like hoarding it for the next day. And when it came to the day’s shopping, I was hyper aware of what would last the longest.

With this feeling I went into the local Albertsons, and for $1.89 bought:

1 packet of whole wheat pasta (great comfort food and it’s filling and cheap!)
1 can of chickpeas

At the local Mexican market I spent the remaining funds of $3.58 (remember, my budget for today was $5+ the 43¢ I saved yesterday?) and got:

3 medium tomatoes
2 medium potatoes
some fresh green beans
1 medium zucchini
1 medium carrot
1 lemon
garlic cloves
1 bunch cilantro
1 Gala apple

My menu for the day looked like this:

BREAKFAST: 1 banana

LUNCH:

Leftover Borcht soup

Borscht

Chickpea Salad

Vegetable Pasta

Vegetable Pasta

DINNER:

Potato & Chickpea Stew with Brown Rice

Potato Chickpea Stew

As you can see, I had plenty to eat, once again!
