Spring Onions and Quinoa

Serves 2-4
Prep time 10 minutes
Cook time 20 minutes
Total time 30 minutes


  • 1/2 cup quinoa
  • 1/2 cup spring onions (finely chopped)
  • 1/2 cup tomatoes (chopped)
  • 1/2 cup cilantro (finely chopped)
  • 1 teaspoon cumin seeds
  • salt (as per taste)
  • 1 tablespoon lemon juice
  • 1 teaspoon black pepper (ground)


1. Rinse the quinoa in water a couple of times.
2. In a pan heat 1 cup of water and add the quinoa. Cook on high till the water comes to a boil. Lower the heat to a simmer and cook for another 10 mins.
3. In another pan, roast the cumin seeds on medium heat, till they turn brown, being careful not to burn them.
4. Add the spring onions, tomatoes and cook for a minute.
5. Add cilantro, salt and pepper and cook for another minute.
6. Stir in the cooked quinoa and lemon juice and cook for another minute.
7. Serve hot or cold as desired with sautéed vegetables and beans.
