Red Kidney Beans Stew

Serves 4-6

Quick and easy to make vegetable and bean stew.

Ingredients

  • 1 cup kidney beans (dry)
  • 1 cup leek (finely chopped)
  • 1 teaspoon garlic (grated)
  • 1 cup red bell pepper (diced)
  • 1 1/2 cup broccoli (small florets)
  • 2 cups tomaotes (diced)
  • 1 tablespoon fresh dill (finely chopped)
  • salt (as per taste)

Directions

1. Soak the beans for 6-12 hours in filtered water. Rinse thoroughly.
2. In a pot, add the beans and 2 cups of water. Cook on medium heat for 15-20 mins till the beans are halfway cooked. If you see a build-up of froth, scoop it out and discard.
3. Add the leeks, garlic and tomatoes. Cook for another 10 mins.
4. Add the bell peppers and broccoli, salt and fresh dill. Add more water if needed. Cook for another 5-10 mins till the broccoli is cooked.
5. Serve hot on a bed of rice medley.

Note

This recipe shows you how to soak and cook dry beans. You can also use canned beans. Rinse the beans thoroughly and add 1 cup of water. Follow the recipe from where you add the leek and garlic.
