Potato Chickpea Stew

I like to add leftover chutneys and sauces into stews as they have the concentrated flavors just like spice blends. This recipe uses celery chutney.

Ingredients

  • 1 1/2 cup potaotes (diced)
  • 1 cup chickpeas (cooked)
  • 1 Medium tomato (chopped)
  • 1 stalk green onions (finely chopped)
  • 1 ” ginger (grated)
  • 1 tablespoon celery chutney
  • 1 tablespoon fresh cilantro (finely chopped)
  • salt (as per taste)

Directions

1. In a pot, cook the green onions, ginger and celery chutney for 1 minute.
2. Add the potatoes and tomatoes. Cook for 10-15 mins till the potatoes are cooked.
3. Add the cooked chickpeas, salt and cook for 2-3 mins.
4. Garnish with cilantro and serve hot with brown rice.
