Kale Pasta

I like my pasta to have lots of vegetables, so I like to make this dish when I have a lot of leftover fresh vegetables in the fridge that need to be eaten.

Kale Pasta

  • 1 1/2 cup fusili pasta
  • 1 cup green onions, green leaves only (finely chopped)
  • 1 cup tomatoes (finely chopped)
  • 2 cups kale (finely chopped)
  • 2 cups broccoli (small florets and chopped stems)
  • 1/2 clove garlic (crushed)
  • 1/2 teaspoon dried oregano
  • salt (as per taste)


1. Bring a pot of water to a boil. Add the pasta and cook for 10-12 minutes. Drain and keep aside.
2. In a pan cook the onions and tomatoes in 1/2 cup of water. Add oregano and cook for 10-12 minutes. Add water as needed.
3. Blend the sauce using a hand blender.
4. In another pan, sauté the kale and garlic in 2 tablespoon of water. Cook till the kale has wilted lightly, about 4-5 minutes.
5. Add the kale to the pasta.
6. In the same pan used for the kale, sautee the broccoli in 2 tablespoon of water for 4-5 minutes.
7. Add the broccoli and salt to the pasta. Pour the sauce and mix the paste, vegetable, and sauce together.
8. Serve hot.
