Chickpea Salad

Chickpeas are one of my favorite additions to lunchtime salads, but you can substitute with any other beans, like great Northern, Black-eyed peas.

Chickpea Salad

Serves 2
Prep time 10 minutes

  • 1/2 cup chickpea (cooked)
  • 1 cup zucchini (chopped)
  • 1 cup celery (chopped)
  • 1 cup carrot, shavings (loosely packed)
  • 1/2 stalk spring onions (finely chopped)
  • 1/2 tablespoon lemon juice
  • salt (as per taste)
  • 1 tablespoon cilantro (finely chopped)
  • 15-16 Leaves butter lettuce


1. In a bowl bring all the ingredients together except for the lettuce.
2. Toss the mixture well and let sit for about 15 mins.
3. Serve on a bedding of butter lettuce.
